Cous cous con sgombro e cozze - Cous cous with mackerel and mussels

Today I'm sharing another of my best recipes: cous cous with fish and mussels

I created it "by chance" during last summer holiday in Sardinia: there was a van selling fresh fish and local mussels near our bungalow and I didn't resist the temptation to try them, mixing ingredients according to the inspiration of the moment

Ingredienti per 2 porzioni:
400gr di cozze (peso con gusci inclusi)
uno sgombro di media grandezza
uno spicchio d'aglio
prezzemolo tritato
due cucchiai di passata di pomodoro
1 bicchiere di cous cous (meglio se integrale)
mezzo bicchiere d'acqua
mezzo cucchiaino di curcuma in polvere
olio extra vergine di oliva
sale
Ingredients for 2 servings:
400gr mussels (weight includes shells)
one medium size mackerel
one clove of garlic
chopped parsil
two tablespoons of tomato puree
1 glass of cous cous (better if whole)
half glass of water
half teaspoon of curcuma powder
extra vergin olive oil
salt

Clean the mussels (if you find them already cleaned so much the better!) heat two tablespoons of oil in a pan, pour in the nussels, close the lid and let cook for some minutes until all the mussels are open. Remove the mussels from the pan, fitler the liquid (you can use a piece of thin clean fabric, like a handkerchief) and keep it aside

Clean and fillet the fish and cut it into small cubes. In a clean pan heat some oil with the garlic (I chopped it because I love garlic, but you can also let it whole so you can remove it before serving) and the chopped parsil. Add the fish and let cook for one minute, then add the tomato puree, the mussels (I remove the shells for ease) and some tablespoons of their filtered liquid: since this is really salty there should be no need to add more salt, in doubt taste it. Let cook some minutes until the fish is ready

Meanwhile put to boil in a small pot the half glass of water together with half glass of the filtered mussels liquid. In a bowl mix the cous cous with one tablespoon of oil and the curcuma powder. When the liquid is boiling put it over the cous cous, cover with a lit and let sit for some minutes until it's swelled (check instructions on the package for the exact time). Once it's ready put the cous cous in the dishes leaving a hole in the middle where you will pour the fish and mussels

Buon appetito!
Enjoy your meal!

Torta salata con zucchini e salmone affumicato - Zucchini and smoked salmon savory cake

Oggi è il mio compleanno!!!
Today's my birthday!!!

Therefore I decided to share with you the recipe of a cake... but since I prefer savory to sweet, this is a savory cake! It's one of my best dishes, I often prepare it when we have guests for dinner, as starter, and it always wins great success: many friends after tasting it asked me the recipe!

Per la pasta:
200g farina (io ne ho usata circa 80g integrale e 120g normale)
For the dough:
200g flour (I used approx 80g whole wheat flour and 120g white flour)
45g extra virgin olive oil
half sachet of yeast for savory cakes (approx 8g)
a pinch of salt
water as required (usually less than half a glass)

Per il ripieno:
3 zucchine grandi (o 4 medie)
100g salmone affumicato
aglio e prezzemolo
100g ricotta
1 uovo
For the filling:
3 big zucchini (or 4 medium)
100g smoked salmon
garlic and parsley
100g ricotta
1 egg

In a bowl mix both kind of flour, oil, salt and yeast, then add water a bit at a time until you can easily knead the mix (I prefer the dough to be quite soft so it's less hard to spread it!)

Lasciatele intiepidire e poi unite ricotta e uovo
Let the dough rest under a dishcloth, meanwhile cut the zucchini into slices and cook them in a pan with with oil and chopped garlic and parsley. Let them cool and then add the ricotta and egg

As soon as the filling is ready, spread out the dough into a circle and put it into a cake pan (I use a silicone one so I don't need to grease it), cover the base with the salmon and cover with the zucchini mix. Oven cook for 35 minutes at 180°C

Provatela e fatemi sapere com'è venuta!
Just try it and let me know if you liked it!

Here is another of my favourite dishes: mushroom quinotto, that is a sort of risotto but made with quinoa!

In polpette?
When I see a new, unknown food I can't resist the temptation to try it! Few years ago I discovered quinoa but at the beginning I didn't know how to cook it: boiled? But it's too small, how can you drain it when ready! In meatballs? I tried, and they were good but always too dry (maybe I should try again...). And then I had the intuition: like a risotto! Since this recipe is tested and I like it a lot, here it is!

Ingredienti per 2 persone:
80 gr quinoa
40 gr riso
100 gr funghi champignon freschi
un piccolo scalogno o cipolla
brodo vegetale caldo (circa 1 litro)
olio extra vergine di oliva
sale
formaggio Grana grattuggiato (facoltativo)
Ingredients for 2 servings:
80 gr quinoa
40 gr rice
100 gr fresh mushrooms
a small shallot or onion
hot vegetable broth (approx 1 liter)
extra vergin olive oil
salt
grated cheese (optional)

Congelare (parte 2) - Freezing (part 2)

Bentornate!
Welcome back! It's some time since I wrote about cooking: today I'll continue the "Freezing" topic started in this post

One thing that is never  missing in our freezer is vegetables: I seldom buy frozen ones, instead I buy plenty of fresh vegetables, local if possible, and all that we don't eat in few days go directly to the freezer

I usually freeze vegetables cut in small cubes or thin slices, so they are easy to use in every occasion:
"What can we eat for dinner? What about some pasta with aubergine souce?" and - ZAC - I put a handful of aubergine cubes out of the freezer and in few minutes, just the time for the pasta to cook, and the souce is ready!
"Would you like some vegetable soup for dinner?" and - ZAC - I put out of the freezer all my bags and I can choose on the spot the combination that inspires me most: one kind of vegetables, two kinds or a mix of all the available ones

To make the cubes freeze individually so they don't become one big ice block have a look at the tray method that I explained here
(nella foto: funghi champignon congelati a pezzetti)
(in the picture: mushrooms frozen in small pieces)

One thing I recently learnt (ok, maybe you already knew, but to me it was a great discovery) is that it's far easier to peel pumpkin when it's frozen! One day I quite destroyed my hands to peel a piece of pumpkin to freeze it. Since I had also another piece of pumpkin but I was too tired I decided to just cut it in cubes and freeze it without peeling: the peel problem was postponed to another moment...

Well, I discovered that when I put the pumpkin cubes out of the freezer I just need to leave them five minutes at room temperature and cutting away the peel becomes incredibly easy!!!

Provate e poi fatemi sapere! Spero che questi consigli vi saranno utili!
Just give it a try and let me know! I hope these suggestions will be useful!

Congelare (parte 1) - Freezing (part 1)

In cucina, il mio migliore amico è il congelatore
In the kitchen, my best friend is the freezer

I always have little time for cooking, but I don't want to give up to precooked or canned food, I like to know exactly what I'm eating. Unfortunately most of the ingredients I like (whole cereals, beans) require long cooking...

So when I have enough time to prepare those ingredients I prepare a big quantity and then freeze what we don't eat immediately. In this way also during the week, when we arrive at home late, we have cereals and beans available in a very short time

Usually I buy beans or whole cereals dried and then during the weekend I cook half kilogram at a time (we are in two at home so this amount is enough for many meals): I put them to soak the evening before, then I boil them for the needed time (the time depends on the type of bean or cereal, but usually no less than one hour). Once ready I drain them, put under cool water to decrease the temperature and then let them drain inside the colander

As soon as they are completely cool and dry I put a small amount on a cardboard tray like the ones of the pastry shop and I put it in the freezer. Pay attention that the beans (or cereals) don't overlap, in this way once frozen they won't form a unique block but will split easily and you will be able to pick up only the amount you need

After one hour I take the tray off the freezer and move the food, frozen by now, in a freezer bag (to detach the food from the tray simply wring the tray a bit, the beans will come off easily). Then I dry the tray and repeat the operation to freeze another part of beans

To use them you don't need to defrost: just heat them in a pan with a bit of water for few minutes, or add them in soups shortly before the dish is ready (like I did in my recipe of the fall cream with pumpkin, carrots and lentils)

It's true, this requires much more time than opening a can of beans, but in this way I know what I'm eating and I also have much choice: there are a lot of dried bean varieties that I never saw canned!

I tried the same method with chestnuts, I bought them dried and then boiled and freezed: they remain perfect!

Zuppa arancione - Orange-coloured soup

Autumn: multicoloured leaves invade the streets, pumpkins fill the market counters (and the web) and the cold weather makes us appreciate a good hot soup!

So I decided to share with you the recipe of a really autumnal soup, I made few days ago. The preparation is quite fast (expecially if like me you have already cooked ingredients at hand, but I'm adding also a fast alternative if you don't have them) and the result is delicious (husband confirms)  so this is one of the recipes absolutely to repeat!

Ingredients for two servings:
pumpkin (approx 300 grams including peel)
two carrots
one small onion
one glass full of cooked lentils (*)
one handful of cooked spelt (*)
two glasses of vegetable broth (also made from stock cube if you don't have time to make it the proper way...)
EVO oil and salt

(*) I usually boil huge quantity of food that require long cooking (like beans or whole cereals) and store them in the freezer to have them at hand in zero time. I'll write a post on time-saving tricks! Here you can replace lentils with canned beans of your choice and the spelt with small pasta that requires little cooking

Wash and peel the vegetables. Cut it in very thin pieces: I try to reduce to the minimum the cooking time, partly to preserve the nutritionals as much as possible and partly because my time for cooking is always too short!

Heat some oil in a pan, add vegetables and stir for a couple of minutes, then add the broth. Boil on low heat until the vegetables are soft but don't overcook them! If too dry add a bit of water. Remove from the burner, let cool for few minutes and reduce to puree with a hand blender to obtain a bright orange-coloured cream. Season to taste, add the lentils and spelt (or the small pasta and the canned beans rinsed and drained) place again and heat up for a couple of minutes (or for the time indicated for the pasta)

Serve adding if you like a bit of chopped parsley and some bread crouton.

Buon appetito!
Enjoy your meal!

Cucinare - Cooking

Io amo cucinare.
I love cooking. I just noticed I never wrote this on the blog!

I particularly love to make experiments, I hardly ever realize two times the same recipe in exactly the same way. In other words, cooking is another field where I give vent to creativity!

Possiedo tonnellate di libri e giornali di cucina. E li leggo in continuazione.
I have tons of books and newspapers with recipes. And I read them over and over again. So much that my husband told me more than once "What are you doing with all those recipes? You never realize one!" This is partly true. I mean I never followed a recipe from the beginning to the end: sometimes because I like a recipe but it has an ingredient that we don't particularly like and I try to replace it with another one, sometimes because I try to make a recipe lighter (for example, in our home butter is very seldom used), sometimes because I decide to make a recipe last minute and obviously I don't have all the needed ingredients at home (and I don't have time/will to run to the supermarket)

Most of the times what I do is to mix recipes. Of a recipe I like the ingredients combination, of another I like the baking method, of another one I like the spices, and so on.

Basically my cooking is a continual experiment. Luckily my husband is not picky about food and doesn't draw back even from the less successfull experiments!!!

Sometimes I reach passable results, that can be improved. Sometimes the result is really not up to scratch... and sometimes luckily I create dishes not bad at all! Well, these are the dishes I'd like to replicate but it's not easy since I follow my creativity when cooking and hardly ever measure ingredients...

Vi piace come idea?! E com'è il vostro approccio all'arte culinaria?
So I decided that from now on I'll pay closer attention when I realize my best dishes and I'll publish the recipes on this blog. So I will share them with you and at the same time create an archive that will be useful also for me!
Do you like this idea?! How is your approach to cooking?
