Congelare (parte 1) - Freezing (part 1)

In cucina, il mio migliore amico è il congelatore
In the kitchen, my best friend is the freezer

Ho sempre poco tempo per cucinare, ma non voglio arrendermi ai cibi pronti o in scatola, mi piace sapere esattamente cosa sto mangiando. Purtroppo molte delle cose che mi piacciono (cereali integrali, legumi) richiedono una lunga cottura...
I always have little time for cooking, but I don't want to give up to precooked or canned food, I like to know exactly what I'm eating. Unfortunately most of the ingredients I like (whole cereals, beans) require long cooking...

Così quando ho abbastanza tempo per fare cuocere questi ingredienti ne preparo in abbondanza e poi congelo tutto ciò che non consumiamo immediatamente. In questo modo anche durante la settimana, quando arriviamo a casa tardi, abbiamo cereali a legumi disponibili in pochissimo tempo
So when I have enough time to prepare those ingredients I prepare a big quantity and then freeze what we don't eat immediately. In this way also during the week, when we arrive at home late, we have cereals and beans available in a very short time

In genere acquisto legumi o cereali integrali secchi e poi durante il weekend ne preparo mezzo chilo per volta (noi siamo in due in casa quindi questa quantità ci basta per diversi pasti): li metto in ammollo la sera prima, poi li faccio bollire per il tempo necessario (il tempo di cottura dipende dalla tipologia di legume o cereale, ma difficilmente è inferiore all'ora). Una volta cotti li scolo e li passo subito sotto il getto dell'acqua fredda in modo da abbassare la temperatura e poi li lascio scolare per bene nel colapasta 
Usually I buy beans or whole cereals dried and then during the weekend I cook half kilogram at a time (we are in two at home so this amount is enough for many meals): I put them to soak the evening before, then I boil them for the needed time (the time depends on the type of bean or cereal, but usually no less than one hour). Once ready I drain them, put under cool water to decrease the temperature and then let them drain inside the colander

Quando sono completamente freddi e asciutti ne distribuisco una piccola parte su un vassoio di cartone tipo quelli della pasticceria e lo metto nel congelatore. Fate attenzione che i legumi (o cereali) non siano sovrapposti, così una volta congelati non formeranno un blocco unico ma si divideranno agevolmente e potrete prelevare dal congelatore solo la quantità che vi occorre 
As soon as they are completely cool and dry I put a small amount on a cardboard tray like the ones of the pastry shop and I put it in the freezer. Pay attention that the beans (or cereals) don't overlap, in this way once frozen they won't form a unique block but will split easily and you will be able to pick up only the amount you need

Dopo un'ora estraggo il vassoio e sposto gli alimenti ormai congelati in un sacchetto per congelatore (per farli staccare dal vassoio di cartone basta torcerlo leggermente, i legumi si staccheranno facilmente). Asciugo il vassoio e ripeto l'operazione per congelare un'altra parte di legumi
After one hour I take the tray off the freezer and move the food, frozen by now, in a freezer bag (to detach the food from the tray simply wring the tray a bit, the beans will come off easily). Then I dry the tray and repeat the operation to freeze another part of beans

Per utilizzarli non serve scongelare: basta ripassarli in padella con poca acqua per alcuni minuti oppure aggiungerli alle zuppe verso fine cottura (come ho fatto nella mia ricetta della crema autunnale di zucca, carote e lenticchie)
To use them you don't need to defrost: just heat them in a pan with a bit of water for few minutes, or add them in soups shortly before the dish is ready (like I did in my recipe of the fall cream with pumpkin, carrots and lentils)

E' vero, questo richiede più tempo che aprire un barattolo di legumi in scatola, ma almeno so esattamente cosa mangio e posso anche variare la scelta: si trovano moltissime qualità di legumi secchi che non ho mai visto in scatola! 
It's true, this requires much more time than opening a can of beans, but in this way I know what I'm eating and I also have much choice: there are a lot of dried bean varieties that I never saw canned! 

Ho provato lo stesso sistema anche con le castagne, le ho acquistate secche e poi fatte bollire e congelate: rimangono benissimo!
I tried the same method with chestnuts, I bought them dried and then boiled and freezed: they remain perfect!

  2. Mi sembra un'idea davvero utile, non avrei mai pensato di usare prima il vassoio...

    1. Per me è comodissimo, così i legumi rimangono separati tra loro (o al massimo a piccoli gruppetti) e si scongelano rapidamente.
